# Greenbeans with Mushrooms ## Ingredients * 4 C (24 oz) greenbeans/haricot vert, trimmed and cut to 1 in. * 1+ T olive oil * ~1 lb sliced mushrooms * 1/2 finely chopped white or yellow onion or shallots * 2 T butter or margarine * 2 T chopped fresh basil * salt and pepper to taste ## Method In a pan with a steamer insert, steam beans until fork-tender (7-10min). Drain and set aside. In a skillet over medium high heat, heat the oil and saute the onion until it turns transparent, remove from the pan. Bring the pan back up to temperature and then add the mushrooms, cooking them until they lose their moisture. Add the drained beans, sauted onion, and butter. Heat and mix well. Finally, stir in the basil and season with salt and pepper.
